Since opening its doors in 2011, the first Shang Palace in Europe has been serving Paris. Distinguished by numerous accolades and awards since 2012, the restaurant invites guests on a journey of discovery into haute Chinese gastronomy.

​

Chef Tony Xu and his brigade of four culinary "masters" from Hong Kong ensure traditional tastes are blended with local influences and modern techniques for a unique and wholly authentic experience. 

 

The team consists of four Masters:

Wok • BBQ • Chopper • Dim Sum

CHEF TONY XU

Chef Tony Xu, who hails from Chengdu in China, with more than 20 years' experience working in mainland China, is the 

Executive Chef of Shang Palace. 


As a gastronomy enthusiast, he combines traditional Chinese cuisine methods with his unique vision of modern culinary art, while meticulously selecting his products in a sustainable way.


His commitment to delivering exceptional dining experiences for his guests, have earnt him recognition in the Michelin Guide and awards such as the "Black Pearl" in China.

Chef Tony Xu is proud to continue the culinary heritage of the Shang Palace, while bringing his own personality and exceptional know-how to the table.

TRIBUTES & INNOVATIONS

With the utmost respect for Chinese tradition, Chef Xu introduces a few innovations and reimagines traditional dishes such as pork belly and sweet-and-sour eggplant stuffed with shrimp and fish, revealing new layers of flavor.

 

The Chef also pays a graceful tribute to French gastronomy and its finest ingredients with a unique and surprising sweet-and-savory creation—his sweet-and-sour foie gras—striking a perfect balance between quintessential Chinese flavors and a product of French culinary excellence.

SIGNATURE EXPERIENCES

DIM SUM
Experience a wide variety of fried, baked and steamed delicacies, each filled with authentic flavours and handcrafted by our master
Dim Sum chefs.

PEKING DUCK
The Peking Duck is served in two styles: Crispy duck skin with pancakes followed by wok-fried minced duck breast wrapped with lettuce.

FROM FARM TO TABLE

At Shang Palace, Chef Tony Xu celebrates Chinese gastronomy by drawing inspiration from the seasons and collaborating with local producers committed to organic and regenerative farming.


Among them, the family-run Kaiping Farm in Normandy grows more than thirty varieties of vegetables, fruits, and herbs, using earth-friendly methods: manual weeding, crop rotation, drip irrigation, composting, and biodiversity promotion through hedgerows and beneficial insects.


These exceptional ingredients, carefully selected by Chef Xu, inspire refined creations where authenticity, quality, and sustainability come together.

DISCOVER THE TEA CEREMONY

Immerse yourself in authentic Chinese hospitality at Shang Palace. In China, tea is far more than a culinary tradition; it is a living expression of ancient heritage, celebrated through the Gong Fu Cha ceremony, which originated in southern China.

​

A ritual of precision and sharing, each movement in this ceremony preserves centuries of artistry, carried out with grace, elegance, and serenity. Central to the experience is a bespoke tea cart, a functional work of art that elevates every step of the ritual, from pouring water at the perfect temperature to the delicate infusion of tea leaves.


At the heart of this ceremony lies the Pu-erh cake, a rare, aged tea revered for its deep, earthy character and layered aromas that embody the richness of China’s tea culture.
 

EVENTS

Shang Palace offers two private dining rooms:
the Tang, which can accommodate up to 12 guests, and the Qing Ming, with a maximum capacity of 24 guests.
